Soup with meatballs and rice - the basic principles of cooking

Meatballs for soup are prepared from minced meat or fish. The minced meat is seasoned with spices and salt, add an egg and finely chopped onion to it. All mix well, slightly discouraging. Then, small meatballs are made from prepared minced meat and laid out on a cutting board.

Vegetables are peeled and washed. The potato is ground into small pieces. Finely grate the carrots. Chop the onion as small as possible.

Potatoes are put in boiling drinking water and boiled until soft. While boiling potatoes, make frying of onions and carrots. Then send it after the potatoes. Rice is washed and put in soup when the potatoes are half ready. The soup is seasoned with spices, salted and at the end lay meatballs. Cook until they pop up.

Chopped greens are put in soup, turn off the fire and leave it to insist for half an hour.

To diversify the taste of the soup, you can add cauliflower, mushrooms, noodles or cheese. Serve soup with meatballs and rice with sour cream.

Recipe 1. Meatball and Rice Soup

Ingredients

vegetable oil;

a glass of rice;

salt;

two liters of filtered water;

600 g of minced meat;

black pepper;

four potatoes;

fresh greens;

carrot;

two onions;

a pinch of turmeric.

Cooking method

1. Season the minced meat with salt and season with spices. Stir well and make small meatballs.

2. Peel and cut the potatoes into small cubes. Wash rice under running water.

3. Put a pot of water on the fire. Put potatoes and washed rice in boiling water. Mix well and cook for a quarter of an hour.

4. Salt the soup, season it with curry and spices. Add meatballs to the soup and continue cooking over medium heat.

5. Peel and chop the carrots and onions as finely as possible. Pass the vegetables in hot oil until golden brown. Put the vegetable fry in the soup, mix and cook for another five minutes. Pour the meatball soup onto the plates, sprinkle with herbs and serve with sour cream.

Recipe 2. Soup with Meatballs, Rice and Egg

Ingredients

six potatoes;

vegetable oil;

300 g minced pork and beef;

fresh greens of dill and parsley;

onion head;

salt;

a small carrot;

ground black pepper;

two eggs.

Cooking method

1. Peel and wash the potatoes. Cut the vegetable into small cubes.

2. Put chopped potatoes in a pot of water and put on fire. Twist the fire as soon as the water boils and salt.

3. Peel and grate the carrots. Finely chop the peeled potatoes.

4. Put onion in hot oil and fry it until golden brown. Add carrot to the onion and continue to fry, stirring, for another two minutes.

5. Add the egg to the minced meat, salt and pepper. Knead very carefully with your hands. If the minced meat is liquid, you can add some semolina. Make meatballs the size of a walnut from ready-made minced meat.

6. Rinse the greens and finely crush it. Beat the egg in a separate bowl.

7. When the potatoes are cooked, add the meatballs to the pan and cook the soup for another ten minutes. As soon as the meatballs float to the surface, pour a beaten egg in a thin stream, stirring the soup continuously. Add chopped greens and vegetable fry. Stir and cook the soup for a couple of minutes. Serve the soup with meatballs and rice with sour cream.

Recipe 3. Soup with Meatballs, Rice and Green Peas

Ingredients

200 g of frozen green peas;

fresh greens;

a pound of pork tenderloin;

80 ml of vegetable oil;

three onions;

ground black pepper;

six potatoes;

salt;

carrot;

three liters of filtered water;

a third of a glass of rice;

two bay leaves.

Cooking method

1. Peel the tubers of the potatoes, wash them and cut them into cubes. We wash rice in several waters.

2. Cut the peeled carrots into thin, short strips. Shred half the onion in small pieces.

3. Put the pot of water on the fire and bring to a boil. In boiling water, lower the rice groats and potatoes. Cook all together, stirring occasionally, ten minutes.

4. My pork tenderloin, dried with napkins and cut into pieces, medium size. We pass the meat through a meat grinder with the second half of the onion. The resulting minced pepper and salt. We form small meatballs with wet hands.

5. We heat the pan, pour vegetable oil into it and put the carrots and onions in it. Fry, stirring, over low heat for three minutes.

6. Put the frying in the pan. We also send green peas here.

7. Boil the soup, salt, pepper and put the meatballs. Put the bay leaf. As soon as the soup boils, twist the fire to a minimum and continue cooking for another ten minutes.

8. Wash greens and finely chop. Pour it into the soup, mix and cook for another two minutes.

Recipe 4. Soup with Meatballs, Rice and Cauliflower

Ingredients

three liters of chicken stock;

fresh greens;

three potatoes;

salt;

300 g of minced chicken;

black pepper;

300 g of cauliflower;

egg;

onion head;

50 ml of vegetable oil;

carrot;

80 g of rice cereal.

Cooking method

1. Peeled and washed potatoes cut into small cubes.

2. Pour the chicken stock into the pan and put it on the fire.

3. Peel the carrots, wash and grate them coarsely. We clean the onion and chop the cubes.

4. In the boiling chicken broth add onions and half the grated carrots.

5. Rice groats in several waters.

6. Heat the vegetable oil in a pan and fry the remaining carrots in it, stirring for three minutes.

7. Dip the rice into the broth. Stir and add the stewed carrots.

8. In the minced chicken we put the egg and flour. Pepper it and salt. Mix the minced meat well. Meatballs will be boiled separately. In a deep saucepan, boil water and a teaspoon, lower the minced meat in boiling water. As soon as the meatballs pop up, cook them for another ten minutes.

9. We sort the cauliflower into inflorescences and mine. We throw the meatballs into a colander and transfer them to soup, then we send the cauliflower. Cooking the soup for another ten minutes. Pour the soup into plates and sprinkle with chopped herbs.

Recipe 5. Tomato Soup with Meatballs and Rice

Ingredients

250 g of pork and ground beef;

sour cream;

fresh parsley - half a bunch;

two cloves of garlic;

egg;

ground black pepper;

vegetable oil;

salt;

purified water - two liters;

large onion;

80 g long grain rice;

Seven meaty tomatoes.

Cooking method

1. Peel the onion from the husks and chop into small pieces.

2. Rinse parsley, shake off excess moisture and chop it finely.

3. Wash the tomatoes and dip them in boiling water. Blanch tomatoes for five minutes. Gently take out the tomatoes with a slotted spoon and cool. Remove the thin skin with a knife. Transfer the pulp into a blender bowl and kill the mashed tomatoes.

4. Remove the husks from the cloves of garlic and chop them through a garlic squeezer.

5. Rinse the rice until the water becomes clear.

6. Add chopped greens and egg to the minced meat. Pepper and salt. Knead thoroughly and form meatballs, the size of a walnut. Put them on the board.

7. Fry the onion in hot oil until golden brown.

8. Put a pot of water on a fire, cover and boil. Salt and put meatballs in water. As soon as they come up, remove them with a slotted spoon in a separate bowl.

9. Strain the broth and send to the fire again. Put rice in the broth and cook until tender. Add the fried onions and tomato puree. Stir and bring the soup to a boil. Now add the meatballs and crushed garlic to the soup. Boil tomato soup for seven minutes.

Soup with meatballs and rice - tips and tricks

  • To make the soup even more flavorful, add chopped fresh herbs at the end.

  • Add potatoes to the soup, with it the soup will be more satisfying.

  • Put the grated cheese in the soup or pour the cream, this will make it taste creamy.

  • You can make meatballs not only from pork and beef, but also from chicken or turkey minced meat.
